VWAV seitan help

ok this may have been covered before but I'm feeling lazy and can't be bothered to check!!

So I have the UK version of VWAV.  In case you didn't know, the UK does not use volumes to measure stuff that's not liquid, only weights.

I just tried to make the seitan recipe for the second time and yet again the 'dough' was actually a slop and I had to add a ton more VWG.

Just as I was trying to knead the slop I realised that there may have been a problem in the book in the conversion of the amount of VWG from volume (cups) to weight (grammes).

So could someone kindly tell me how much (in cups) VWG the recipe in the US book calls for.  And also how much stock and soy sauce (in the dough) it calls for - although I'm sure these would be ok in my UK book, as converting from cups to millilitres is easy.

2 Cups VWG
1 cup cold water or vegetable broth
1/2 cup soy sauce

I have a "talaware" measuring cup...has everything marked with BOTH measurements on inside ..called a Cooks Measure.  Sold in England and Canada.  I am a Canadian Irish.  It's just a tin devise.  Look in the cheapie stores. It cost me a whole 2 bucks here in Vancouver. ie ..tells you American 1.5 cups = 3/4 pint......6oz almonds= 170 grams.  We use grams here.  and its all written on inside with measurements.  Worth looking for.
