any suggestions?

Hi there, just got news that neighbors of mine have a seriously ill child in the hospital. The neighbors are getting together and taking nights to provide dinner. They are omni and I don't know how many I will be feeding so I was going to make a casserole. I don't want to make anything too "veggie", and I know they already got a mac n' cheese and a lasagna, and I won't make meat. Any casserole suggestions for a veg*n casserole that I can make that the kids won't know is veg*n (I will use cheese but don't necessarily want to).Thanks so much!!!

Try a good chili recipe or other rich, bean-based soup. Ennui Chilli http://vegweb.com/index.php?topic=14729.0 is excellent, esp if you add mushrooms. There are so many different things in it they'll never miss the meat!

i really love this basic black bean and rice casserole.  you can play around with the recipe to make it a little more complex and whatnot.  and your neighbors might like it a little better with some cheese on top, but of course that is up to you

Thanks so much for the replies. I know they will appreciate not having to think about having to preprare food when they get home.  BTW the K-chick casserole sounds so good I think I am going to make it for my family tonight!!!
