Before going gluten-free my favorite packed lunch was a hummus & veggie wrap. Now, it is a salad, cold Rosemary Roasted Tofu (from Vegan Soul Kitchen by Bryant Terry), some melon or other fruit, and vegan gluten-free cookies or brownies. Yum  8)
