I've had this Thai tofu recipe for a few years now that me and my husband just love. He espeically loves saying Bok Choy as loud as he can.
My favorite would be Pad Thai.
Panang curry over rice, hands down...my local Thai restaurant does it in a vegan, mouthwatering style, I even dream of it sometimes. : )
My favorite Thai restuarant serves a dish called "Hot Pepper" which is tofu sautéed with homemade chili paste, red & green bell peppers, onions, scallions, green beans, snow peas, carrots, broccoli & basil in a brown sauce.

Thai-Style Basil Tofu and Asparagus from Susan Voisin at Fatfree Vegan Kitchen. I use edamame when asparagus isn't in season, or whatever looks good from the farmer's market. It's so good and super easy!
Haven't had much variety of thai yet, unfortunately, but I do love Pad Thai.
