Amazing Baking Soda Cookies

What you need: 

2 cups oats
1 cup baking soda
1 1/2 cup brown sugar
2 flax seed egg equivalents
1 tablespoon kosher salt
1 teaspoon vanilla
1/2 teaspoon Jamaican rum extract
1 cup vegetable oil (I like olive )
1 tablespoon orange juice
3/4 cup crunchy peanut butter (I use natural)

What you do: 

These cookies are so light and fluffy you'll think you're eating a cloud! Dont let the ingredients amounts fool you, it may sound strange, but even my non-vegan friends love them!!!
Preheat oven to 375.
Prepare flax seed eggs equivalents.
Combine baking soda, sugar, extracts, and oil in a saucepan over high heat. Stir until smooth. Remove from heat and let cool.
In a large bowl mix together peanut butter, orange juice, and oats. Stir in baking soda mixture. Add flax seed eggs and salt.
Drop by teaspoonfuls on a greased cookie sheet. Bake for 15 minutes or until golden. You will GOBBLE THEM UP!!!

SO HOW'D IT GO?

Has anyone tried these with 1 tablespoon of baking soda? Maybe that's what the recipe author meant.

No, I don't think so... They're called "Amazing Baking Soda Cookies," and if they only called for 1 Tbsp., that wouldn't make it a main ingredient (hence the title).

Also, in the description of the recipe, the author said:
"These cookies are so light and fluffy you'll think you're eating a cloud!  Dont let the ingredients amounts fool you, it may sound strange, but even my non-vegan friends love them!!!"

Sorry I must say...it was one of my worse cookie experience. Like jessacita said, it was way too salty and it all melted together in the tray. In addition to that, there were too much oil. The oil would seperate from the batter I wanted to give it a benefit of a doubt after reading the first reviewer who said these cookies were amazing and now I got my answer.

OMG!  Looking at the ingredients I HOPE this is a joke!

You'd almost wonder if someone might get physically ill eating a cookie with that much baking soda...1 whole cup in the recipe?!! Not to mention all that olive oil (in a cookie, that might not taste so good...).

This recipe should be removed from the site, IMO...

Oh, my god... These are horrible. To be honest, I have never given a negative review on any recipe, because I usually figure that even if I don't like something, someone else might--so, at the very LEAST, I'll offer constructive criticism. I think that these, however, are unsalvagable...

I am a pretty regular baker and I have never had cookies turn out THIS BAD before. Also, because this was an unusual recipe, I didn't take any liberties with the ingredients (add this, reduce this, etc.). I followed the author's instructions to a T!!!

I like salty food, and salty mixed with sweet is even better. But these were SO salty that I literally almost threw up. When I tried the batter this happened, as well as when I tried an actual "cookie." (Which, speaking of that, every single drop of batter spread like crazy and morphed into a pan of salty, sticky, chewy "dough." There were no actual "cookies" to be had.)

I was super excited to try something so different, but now I honestly wonder if this recipe is a joke and I'm a fool for having tried something that calls for ONE CUP of baking soda. Normally, if a recipe doesn't turn out for me, it's no big deal... Just learn from it and move on! Right now, though, I have to say that I am a little peeved because I wasted MANY expensive ingredients, and in large quantities!  :'( One cup of organic extra-virgin olive oil?! Down the drain... Literally.

Oh, well... Now I know! Please try something different if you're looking for something pleasantly edible!  :)

These Cookies are truly amazing!  I was a bit skeptical at first, but as the ingredients came together I knew these would be delicious.  Thanks for such an innovative and exciting recipe!
