Asian Tofu Stir Fry

What you need: 

1 cup diced tofu

2 tbsp sesame oil

1/2 cup sliced asparagus

1/4 cup red pepper, julienned

1 red onion, sliced

1 tbsp garlic, chopped

1 tbsp gingerroot, chopped

1 cup Shiitake mushrooms, sliced

1/2 cup bean sprouts

1 cup snowpeas, sliced

3 tbsp scallions, snipped

1 tbsp low sodium soya sauce

1/2 tsp basil

What you do: 

1. Sautee garlic, onion and gingerroot in sesame oil for 1 minute

2. Marinate tofu in soya sauce

3. Add asparagus, red pepper, onion, and shiitake mushrooms to saute and cook for 2 minutes

4. Finish off with bean sprouts, snowpeas, scallion and basil
