Avocado and Banana Pudding

What you need: 

1 ripe avocado, de-stoned
1 ripe banana, peeled
1 tablespoon maple syrup
a little vanilla soy drink for consistency
mixed nuts to garnish

What you do: 

Peel the banana, cut it into chunks and do the same with the avocado, also removing the stone.
Add the maple syrup and vanilla soy drink.
Blend, garnish with nuts and enjoy :)

SO HOW'D IT GO?

My bf really really liked it. However about an hour after eating it, he had horrible stomach cramps and threw up and is now in bed. I guess there was too much fat in it for him. I feel bad cause its my b-day today and I wanted to make a nice treat after the cool present he got me. Good thing we really had no plans for the rest of the day.  ;)

could be the banana. I generally only eat them alone and before something else. If I combine it with something else it tends to rip apart my stomach although I don't puke. I had to quit eating my favorite banana oatmeal in the morning because of this.

This was so unexpectedly delicious! I don't even like avocado. I just happened to get one for free and thought I'd try this. I substituted honey for the maple syrup. Sprinkled some oatmeal on top. I will make this again!

Just made this for my partner and me.

Substituted the banana for a black plantain banana, added some maple syrup, molasses, itty bit of soy milk, and some lemon juice and blended by hand.
Doesn't look too pretty, but it tastes great! If only I had some raisins and nuts to put in it.

This sounds so healthy and yummy! Do you think if you made it in the morning and took it to work for lunch/snack (put in a fridge) it would go brown?  Would you have to add a little lemon juice to the whole mixture?

Has anyone tried doing that?

Yum!  This makes for a yummy almost-raw breakfast!  Instead of blending, I just mushed it all up because I didn't want to dirty my blender.  Then I topped it with strawberries, almonds, and some oats.  Delicious!  Thanks for the idea!
