Bad Weather Banana Bread

What you need: 

4 very ripe bananas, 3 if they are big
1/4 cup agave (optional; use is bananas are not very ripe)
1 teaspoon vanilla extract
1/4 teaspoon each nutmeg, allspice and cinnamon
1 2/3 cups self-rising flour*
1/3 cup flax meal
1/4 cup unsweetened soymilk, as needed
3/4 cup dark chocolate chips
1/2 cup cranberries (fresh is best but unsweetened dried works too) (optional)
1/3 raw unsalted walnuts, plus more for top

What you do: 

1) Preheat the oven to 350 degrees Fahrenheit.
2) Mash bananas in a bowl, with agave and vanilla. I like to use a fork, but it doesn't really matter what you use. Leave them fairly chunky- you'll mix them more when you add the flour. The riper the bananas, the wetter and sweeter this will be. Mix in spices.
3) Add in the flour* and flax meal. Add soymilk until you get the consistency you want, not too sticky, and not too doughy. Careful not to over mix. Fold in the vegan chocolate chips, cranberries and walnuts.
4) Pour mixture into a greased loaf pan and sprinkle top with walnuts. Bake about 40 minutes, checking frequently after the first 30 minutes since you don't want it too brown or it will get tough. Toothpick check works. Let cool just a little and eat, best when it's still warm.
* If you don't have self rising, sift in 1 teaspoon each baking powder and baking soda in a separate bowl before adding.
This is awesome when its dark all day and not quite snowing but freezing rain and slush and you don't want to go outside and your apartments cold so you stay in your PJ's all day and review your favorite movies from your VHS collection. This bread is decadent, but has no oil and is full of flax. Be prepared with a big glass of unsweetened soymilk. You can cut down on the chocolate- but why would you want to do that? You can easily do without the cranberries and agave if you don't happen to have them. Perhaps share with your landlord and he'll fix your heat.

SO HOW'D IT GO?

this was great! sadly I didn't have any nuts that would work (only almonds) or any chocolate and I used raisins instead of cranberries. I love simple recipes that come out great! and i loved how it wasn't that bad for you! no sugar or oil or vegan butter!

If I wanted to use oil as opposed to soymilk (or water), would that be appropriate? I never have soymilk on hand...
