Banana Cream Pie

What you need: 

1 lb. extra firm, dry-packed tofu
3 to 4 ripe bananas
4 tablespoon real maple syrup
1 large vegan graham cracker crust
Chopped walnuts (optional)

What you do: 

Press all excess water out of tofu and cube. Combine bananas and syrup in blender/food processor. Add tofu. Blend until smooth. Pour into crust. Top with chopped walnuts, if desired. Refrigerate until it sets.
You might try topping with chopped bananas or strawberries instead of walnuts (just an idea, I haven't tried either).

SO HOW'D IT GO?

My pie ended up tasting like mashed bananas when I was hoping for the more traditional sugary pudding style of dessert. I think if you are looking for a healthy dessert this recipe would be perfect.
