Banana Oatmeal Health Cookies

What you need: 

2 cups mashed ripe bananas
4 cups oatmeal
1/2 teaspoon vanilla
2/3 cup chopped peanuts
1/2 cup applesauce
cinnamon to taste (about 1/2 to 1 tsp)

What you do: 

Preheat oven to 350 degrees.
Mix all ingredients together in a bowl till everything is uniformly moist. Drop dough by tablespoonfuls on an ungreased cookie sheet. The dough will not spread, so flatten it to desired cookie thickness. Bake for 15 minutes. Eat warm or after cooling. Store in an airtight container.
These are awesome snacks, and don't get much healthier. They are wheat-free, with no added sweetener or butter. For a variation, you can substitute the nuts with just about anything: raisins, dates, or if you want to be less healthy maybe some vegan choc or carob chips. :)

SO HOW'D IT GO?

I made these a couple of days ago and they were gone in two days! THey are more muffin like rather than cookie like. I added some rasins as well as walnuts and they were delicious.

Sarah - The oatmeal should be dry.  I guess technically it should say "oats" instead of "oatmeal"...whoops.  I hope you like them...they're quite good for snacking, but I should warn you ahead of time that calling them cookies is a little deceiving because they're not very sweet.  Great for the health-conscious however!  Enjoy!

I'd really like to try this recipe, but I'm confused. Is the 4 cups of oatmeal cooked? Or just the plain oats having had nothing done to them? I'm sorry ???, I just don't want this delicious sounding recipe to go all wonky on me and cause waste of bananas! Thnx!

I substituted dried blueberries for peanuts (cause I didn't have any) and I added a little raw sugar - They had a good consistancy and decent taste, but it felt like they were missing something..  Maybe a little chocolate chips like the other review said.. or candied fruit.. yummy and sufficiently satisfying.

I just made them now and I think they are really good! They taste very healthy  ;) and they'll be good for a quick snack
