BBQ Tofu Cubes

What you need: 

1 tablespoon oil
1 pound firm tofu, drained and diced
2/3 cup vegan BBQ sauce
1/2 cup water
2 tablespoons soy sauce (I use low sodium)
Louisiana hot sauce, to taste
1 tablespoon sugar

What you do: 

1. Heat oil in frying pan and add tofu. Saute on medium until the tofu starts to turn a light golden color.
2. Meanwhile, combine the rest of the ingredients, and heat them in the microwave for 1 minute. Stir this sauce and add it to the tofu.
3. Continue to cook on medium until the sauce has gotten very thick.
Very popular with toddlers!

Delicious!  This was soooo good, I want more! A few minutes after adding the sauce to the tofu I threw in some whole mushrooms. A few minutes after that I added a bunch of Al Dente cooked asparagus, and served it over wild rice when it was all done. It was FABULOUS.  The kids loved it too (7, 3 and 2.) (I did omit the hot sauce for their sake) I'll be making this all the time! Thank you!!
