Bean and "Bacon" Soup

What you need: 

1 tablespoon vegetable oil
1/2 onion, diced
1 large carrot, grated
1 small tomato, diced
3 slices veggie bacon, diced
1 (15-ounce) can navy beans, drained and rinsed
2 cups vegetable broth
1/2 teaspoon thyme

What you do: 

1. In a pan over medium heat, heat olive oil. Add onion and carrot; saute until softened.
2. Add tomato and veggie bacon; cook for 1 minute while stirring.
3. Stir in beans, broth and thyme; bring to a boil, then reduce heat and simmer for 5 minutes.
4. Use a hand mixer or blender to mix the soup to desired consistency. Heat through and serve.
I blended this soup enough to give it a thicker consistency, but not completely pureed so it was still somewhat chunky. I modified the recipe from one I found on It has an amazing flavour!

I used to love bean and bacon soup and it was something I thought was gone forever when I became vegan. When I saw this recipe I was excited and with good's awesome!!! If memory serves me correctly this is very close to the 'real' thing. My vegan boyfriend who had never tried the non vegan version also really enjoyed this.


I thought this recipe was pretty good. :) I didn't change a thing and it turned out a little smokey. I'll be adding this to my list of soups to make again  ;)b


Very simple and soo good!  ;)b I think I will use half the thyme next time, a little of it goes along way for me.


This was really quite tasty. It was my first time trying veggie bacon and I was surprised at how good it was, and not too offensive. I'll be making this again.


I made this soup today, even though it's 93 out.  It just sounded so good, and I was going to the grocery store anyway.  It was excellent.  I added sea salt & freshly ground pepper, and, at the last minute, a splash of Annie's Vegetarian Worcestershire sauce.  I would have added smoke flavor, too, but we were out.  The w. sauce just added a zip to the soup's flavor.  Yum!


This is a super easy soup that has rich, complex flavor.  This would be a great soup for sharing with omnis, because of the smoky bacon flavor.  I used tempeh bacon but, because it's blended, there are no fake bacon chunks to turn off committed meat-eaters.  The color of the soup is a gorgeous orange.  I couldn’t find navy beans, so I substituted with a can of white beans.  This is definitely going into my recipe collection.
