Bread Machine Oatmeal Bread

What you need: 

1 cup warm water
2 tablespoons canola oil
2 tablespoons sugar
1 teaspoon lemon juice
1 teaspoon salt
1 cup oatmeal
2 cups flour (either all white, 1/2 white 1/2 wheat, or other combo)
2 teaspoons yeast

What you do: 

1. Toss all ingredients together in bread machine per machine's instructions.
2. Press the appropriate cycle on your machine.
You will have wonderful vegan bread to enjoy. First time I tried this, the crust was too dark for my preference so now I use the lighter crust setting.

SO HOW'D IT GO?

Nicely dense, slice well, but it tastes a bit salty. Has anyone reduced the amount of salt successfully in this recipe?

This shit is bommmmb. I used regular, old-fashioned oats and added a couple tablespoons each of wheat germ and ground flax seed, and like 1/5 C more water than the recipe calls for. It kind of sunk in the middle, but I just made smaller slices. Very moist, hearty bread and definitely the fluffiest turnout I've had using exclusively whole wheat flour. I believe I've found my new go-to bread recipe.

So, more GF experimenting has shown me that instead of the 2 cups of flour, I can use:
millet, sorghum or brown rice flour, separate or in any combination (1 1/2 cups)
potato or tapioca starch, separate or a combination (1/2 cup)
guar OR xanthan gum (3/4 tsp)
Also, I use ground oats and either lemon juice or vinegar.
For the water, 1 1/2 cups warm water seems to be just right.
Follow the directions in my previous post, taking care not to rise for longer than 25 minutes, or it will fall.
It is delicious with a handful of sunflower seeds tossed in.
I hope that is clear enough, if not, ask to clarify. :)

I successfully made this GF.  ;)b It is sooo awesome! I no longer have a bread maker, so I mixed it up in a bowl. I kept all the amounts the same except for the water, which I added an extra 1/2 cup. For the oats, I used GF oat flour. Instead of lemon juice, apple cider vinegar.
For the 2 cups of flour, the combo I used was this:
1 cup finely ground Brown Rice flour
3/4 cup Tapioca starch
1/4 cup Potato starch
1tsp. Guar Gum

I mixed the sugar and yeast, added the vinegar and 1/2 cup of the warm water, let it sit.
In a separate bowl, I whisked all the dry ingredients together.
Then I added in the oil, the rest of the warm water and the yeast mixture and stirred it all together very well.
The consistency for GF bread is not knead-able, it is more cake like, in fact, very much like banana bread batter.
The batter was poured into a greased bread pan and the top was smoothed with a spatula.
Then, I covered it and let rise for 25 minutes. It was not quite doubled in size, but that's okay. It rose beautifully in the oven, which I preheated to 375.

Could you substitute oat flour in place of the whole wheat flour?

I think that might make it too gummy, though I haven't tried. In fact, haven't made this in years, since I've not been eating wheat any more. I'll try it out again, probably subbing a combo of brown rice, tapioca and guar gum for the wheat flour.

I just tossed this recipe into the bread machine. I added extra yeast and water as per instructions above. Hoping it comes out nicely. It's my turn for bringing dinner to my church small group!

New to vegan, about 4 weeks. Have missed my bread so I tried this recipe it was very, very good, 2&half tsp on yeast and a little over 1 cup of water.Crunchy crust and soft tasty middle. Thankyou so much.

This bread came out really well for me, but with some changes to the recipe. I added 1/4 c. more of water... which I think was too much extra because I needed to add a lot more flour to get the right consistency. I used quick cooking oats and put them through the food processor first. Also, during the second knead, I added a handful (I have tiny hands) of finely chopped toasted pecans and a handful of a 5 oat "hot cereal" + flax seed. Soft and nutty- I use it for sandwhiches all the time  :)
