Broccoli-Peanut Noodles

What you need: 

1 large broccoli head
about 1/2 pound noodles of your choosing
1/2 cup unsweetened peanut butter
1/2 cup water
1 tablespoon cider vinegar
2 tablespoons soy sauce
2 tablespoons sweetener
cayenne, to taste
1/2 cup peanuts, toasted
2-3 medium carrots, grated

What you do: 

1. Steam broccoli and cook noodles according to package directions.
2. Whisk peanut butter and water together over medium heat. Add vinegar, soy sauce, sweetener, and cayenne and heat through.
3. Drain the noodles and broccoli, toss with sauce and nuts, and add raw carrot over all.'

SO HOW'D IT GO?

I used about 1/3 cup peanut butter and 3/4 cup water.  I also stir fried the broccoli and noodles with some garlic and peanut oil before serving.  It was pretty rich, but that's one of the reasons I loved it.  :)>>>  Great recipe!

I agree with many reviewers that this recipe was way too rich but I still enjoyed the flavor so next time I'll us 1/4 cup of peanut butter and maybe add a little more water.

I personally thought that this was a little rich for my liking BUT my 3-year-old son ate BROCCOLI and LIKED it for the first time!  He loves this dish and I make this all the time now. Thank you for this recipe - my son is ultra picky about foods (especially veggies) and he will eat this like crazy.

This was nice but incredibly rich - and with all that peanut butter it's quite a fattening dish!  If I make it again, I'll use less peanut butter.  Nice for a treat tho, so thanks for the recipe.
