Cauliflower Poppers

What you need: 

1 large head cauliflower, chopped to florets
juice of 1 lemon
3 cloves garlic, minced
2 teaspoons Dijon mustard
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon dried dill
fresh black pepper, to taste
2 tablespoons nutritional yeast

What you do: 

1. Preheat oven to 400 degrees F. Whisk together the remaining ingredients.
2. Toss with the cauliflower.
3. Bake for 40 minutes, stirring once about halfway through the cooking time.
They're ready when they get nicely browned and they're tender but not mushy. I like to leave mine in until they get chewy blackened parts, but that's just me.
These are soooo good - sometimes when I want a light dinner I'll just make a batch and eat it all myself, easily as good as French fries!

:-* These are so good!! I decided to try it before going in the oven, and discovered that these taste just as good raw! Made it several times cooked and uncooked, it's great either way.

These are so fantastic! I've made them a couple times now and have never had a bad batch. Since I'm a huge garlic fan I add a bunch more and make sure the cauliflower has a really nice coating of the sauce. I served these the other night with a bbq seitan sandwich topped with coleslaw really really great meal.

I normally make this with purple cauliflower, because my school colors are purple and gold...and I think purple cauliflower is more nutritious. Included pics of the purple goodness. Oh so yummy. :)

Never thought I'd enjoy cauliflower as much as I did when mom drenched it in cheez-whiz, but this is actually better! I think you could put this sauce on chunks of cardboard and it would still be yummy. Haven't tried that variation yet, but have determined that broccoli, potatoes, carrots and zucchini all hold up well. Didn't have any lemons this time - replaced the lemon juice with about 1/4 c. red wine vinegar and found it came out just as delicious. My roommate & I just finished scarfing the pan... :)

I was really hungry and I really wanted to try this, but I only had broccili...so I made it anyway and it was really good! I'm going to try again with cauliflower, i'm sure it'll be great!

Ok so I changed my mind about these... they are awesome but with like double the sauce ingredients... i like the cauliflower really coated and i don't even measure ingredients anymore  :)>>>

What a yummy recipe, I LOVE it!

I was very disappointed to realize that I am out of dill, but I substituted basil and it was very, very delicious.
