Chana Masala

What you need:

2 tablespoons vegetable oil
1 medium onion, chopped
1 large clove garlic, minced
1 tablespoon curry
1 tablespoon tomato paste (I used ketchup)
1 (15 ounce) can chickpeas, drained, reserving 3 tablespoons liquid
1/2 tablespoon lemon juice
1/2 teaspoon salt
fresh black pepper, to taste
crushed red pepper, optional, to taste
1 tablespoon margarine

What you do:

1. Heat oil on medium high heat. Fry onions until slightly browned. Reduce heat to medium. Add garlic, curry, and paste.
2. Stir and simmer about 2 minutes. Add chickpeas, reserved liquid, lemon juice, salt, and black pepper. Simmer 5-6 minutes, stirring occasionally.
3. Add red pepper to taste. Add margarine, stirring through to melt it. Stir and simmer for 5 minutes more or until peas are softened and dish is hot. Serve over rice.'

This recipe was amazing! As I was cooking it, I was worried a little about whether or not I would like it, but it came together wonderfully in the end! This is probably one of my favorite recipes I have gotten off of this web-site! I am cooking it again tomorrow for a potluck.

I served it over couscous.

yes rivers, your photographs really enhance the recipes' appeal.  i noticed them yesterday.  the food looks particularly appealing and edible.  i feel sure they will attract attention to the recipes they represent.  well done for your apparently considered efforts.  keep up the good work.

Is there another bean that I can substitute for the chick peas? I'd love to make this for my boyfriend, but he doesn't like chick peas.  Thanks.

This was so good. I added diced tomatoes and Garam Masala. I served it on Quinoa because I was out of Basmati and it was very good. Thanks for the recipe.
