Cheap and Easy Ramen Soup

What you need: 

1 1/2 cups water
handful miscellaneous frozen vegetables
1 package vegan ramen noodles with vegan spice packet (can be found at most health food stores)
few bite-sized extra-firm tofu cubes, optional
few dashes of Braggs Liquid Aminos, optional

What you do: 

Boil water. Throw in vegetables. I usually use mixed frozen vegetables featuring broccoli, carrots, vegan sugar snap peas, mushrooms and water chestnuts. Of course, you can use any combination you desire. Bring water to a boil again. Add vegan spice packet and stir to dissolve. Add ramen noodles and stir. Remove from heat, cover and let sit for 3 minutes. Stir in tofu cubes. Drain any excess broth if you want to have more of a noddle dish than a soup. Add a couple dashes of Braggs, break out the chopsticks and enjoy!

awesome idea... i knew there was a way to bring nutritional benefit to ramen!

I can't believe I didn't think of this before. Now I feel a bit more healthy when I throw some ramen together for dinner after class :) I used veggie stock and didnt have any braggs but who cares, this was good! thanks for pointing out the obvious haha!
