Chocolate Coffee Cream Cheese Frosting!

What you need: 

1/4 cup vegan butter, softened
8 ounces vegan cream cheese (I use Toffuti cream cheese)
2 cups powdered sugar, sifted
1 teaspoon vanilla extract
1 to 2 teaspoons instant coffee crystals
3 to 4 teaspoons vegan hot cocoa mix (I used Ah!Laska brand)

What you do: 

1) Cream together vegan butter and about 1/4 cup vegan cream cheese until combined.
2) Add powdered sugar in small batches until the consistency is stiff but still creamy and smooth, then add vanilla extract.
At this point I started adding more and more cream cheese because it just tasted too sweet, next thing I knew I had used the entire container. You won't regret it.
3) Start adding coffee crystals and hot cocoa until you feel it's the right flavor. For me that was about 2 teaspoon of coffee and 4 tablespoon of hot cocoa. Don't be scared if at first you keep getting tastes of bitter coffee. The crystals will dissolve and blend in better as you keep mixing and after it sits.
4) Once the frosting is a creamy and a somewhat thin consistency put it in the fridge for at least a half an hour (I can never wait longer than that). The frosting will thicken up but make sure whatever you put it on is completely cool.
