Chocolate Ginger Oatmeal Surprise

What you need: 

3/4 cup soy margarine
1/4 cup organic Spectrum Shortening
2 teaspoon egg substitute (use as directed)
3/4 Cup raw organic sugar
3/4 Cup organic packed brown sugar
1 Cup regular organic oatmeal uncooked
1 Cup Trader Joes Ginger granola (if not available, use 1 cup granola + 1 teaspoon fresh grated ginger)
2 cups organic pastry flour
1 teaspoon baking soda
1 12 oz pkg of vegan chocolate chips or carob chips
1/2 to 1 cup chopped nut (either pecans or walnuts)

What you do: 

Cream margarine/shortening/sugar, add prepared egg replacer. Blend flour oats and granola with baking soda and then add to creamed mixture until blended. Add chocolate chips and nuts.
I make big cookies using a ice cream scoop onto un-greased cookie sheet. Flatten just a bit with your hand or spatula. Bake at 375 degree pre-heated oven on middle rack for about 13 minutes of or until brown. Happy eating.
