Coconut Tofu Satay

What you need: 

1 lb of extra firm tofu or unflavored baked tofu
1 can of coconut milk (fat free or regular)
2 tablespoons (or more to taste) Chili Garlic Sauce
1/4 cup of fresh chopped cilantro (optional)
2 cloves of minced garlic (optional)

What you do: 

1. Press tofu of excess moisture. 1a. Bake Tofu in toaster oven or regular oven at 350 or until golden brown on all sides turning once. (let cool)
2. Mix the coconut milk, garlic sauce, garlic and cilantro in a glass baking dish
3. Cut tofu into strips and immerse in marinade. For best results, let marinade over night.
4. Preheat broiler, transfer tofu satay to foiled covered broiler pan, reserve excess marinade. Broil for 10-15 minutes.
These look really cute on skewers and garnishe'd with chopped cashews or peanuts.
