Cold Sesame Noodles

What you need: 

1 package of Udon noodles cooked according to package instructions
1/4 cup of crunchy natural peanut butter
5 tablespoons of tamari or soy sauce
2 tablespoons of fresh grated ginger
2 cloves of pressed garlic
1 tablespoon of hot sauce
1/4 tablespoon of dark sesame oil
2 tablespoons of light brown sugar

What you do: 

Cook the noodles according to package instructions, drain, and rinse well in cold water. Set aside
Add the other ingredients in a blender or food processor. You don't want the mixture to be too thick, or too runny. If its too thick, add hot water in one tablespoon increments.
When you have the desired consistency, pour over the noodles and top with toasted sesame seeds if desired.
