Couscous for breakfast

What you need: 

1 cup uncooked whole wheat couscous
1 cup walnut meats
2 cups thick soy yogurt
3/4 cup dark brown sugar
1 teaspoon ground cinnamon
pinch ground clove
sliced fruit to taste: good with banana, peach or blueberries

What you do: 

Prepare couscous according to package Directions. Place in serving dish.
Mix sugar and spices together. Top couscous with an even layer of yogurt, and sprinkle spiced sugar evenly. Cover this with walnut meats and the sliced fruit, attractively placed.
Can be served hot for breakfast or cold from the fridge as a dessert. You might want more yogurt for the dessert version.

Sisse, I'm sorry, I didn't see your post till now. You can try this with any cooked grain you like. I do like wholewheat couscous but I get tired of it in salad. The breakfast dish is particularly good with fresh strawberries.
You could also add some sugar and spice to the couscous when preparing it...the flavours would spred more.

Hi, thanks for posting this. While the taste of this dish was fine (not bad and not mind-blowing), I think it is great how you introduced couscous as a breakfast idea! I've used oats and quinoa, but this works really well in terms of the texture and consistency. I also would not have thought of putting on the plain soy yogurt, which I conveniently had in my fridge. I will definetly be doing this more often... :D

I just saw this recipe, and I wonder if I can use bulgur or other kinds off grain? I'm not in to couscous that much  :-\
