Creamy Chili Bean Tacos
2 cloves garlic, crushed
1/4 red onion, minced
1/2 teaspoon olive oil
1 (15 ounce) can mild chili beans
1/4 teaspoon chili powder
1/4 teaspoon mustard powder
6 whole wheat tortillas, warmed
6 vegan cheddar cheese slices
handful fresh cilantro, chopped
1. Saute onion and garlic in olive oil for a minute or so. Add chili beans and the sauce that comes in the can.
2. Add chili powder and mustard powder. Cook on high for a few minutes until thickened. I use a wooden spoon to mash about 1/2 the beans during the cooking.
3. Layer vegan cheese and beans in tortillas, wrap up, top with cilantro, and enjoy!
