Curried Chickpea Sandwich

What you need: 

1/2 cup canned chickpeas
paprika,to taste
curry powder, to taste
garlic powder, to taste
2 tablespoons vegan mayonnaise (I use Vegenaise)
3 baby carrots, diced
2 thick slices pumpernickel bread (I make my own)
4 cucumber slices
1 thick slice beefsteak tomato
salt and pepper, to taste
mustard, to taste

What you do: 

1. In a small bowl, use a fork to mash chickpeas with the next five ingredients.
2. Spread this mixture on 1 slice of pumpernickel. Place on top of this mixture, the sliced cucumbers (lightly salt and pepper the cucumbers and tomato, if you wish), and the sliced tomato.
3. On the other slice of vegan bread, smear on the mustard (I love mustard, so I used quite a bit). Sandwich it all together, and enjoy!

SO HOW'D IT GO?

This was really good  and quick to make. I whipped it up in the food processor and pulsed in some raisins and green onion at the last minute for some sweet and crunch.

This looks really, really good!  I have some chickpeas at home waiting to be used, so I'm gonna give this a try tonight.

This made some great sandwiches! We will definitely be making it again. I love the taste of the curry powder. I used Dijon mustard on my bread and I think it might have been better without it, but it was still good! Thank you.

I make chickpea spread all the time...with many variations. I usually add veganaise, horseradish mustard, yellow mustard, curry powder, s, p, green onion, lemon.......but I've added many different things. I tried dill this time..with lime..and it was pretty good. Anything can be added to the sandwich!
