Easy Energy Bars

What you need: 

2 1/2 cups puffed all-natural, no-sugar-added whole grain cereal
3 tablespoons flax seed meal or wheat germ
1/4 cup tahini
1/4 cup peanut butter or other nut butter
1/4 cup brown rice syrup (before pouring syrup into measuring cup, coat the cup with a
little oil so it comes out of the cup nicely)
1/4 cup pure maple syrup

What you do: 

Begin by combining the maple syrup, brown rice syrup, nut butter and tahini in a medium sauce pan over medium/low heat. Stir together well and let it get bubbly. Be careful not to let it burn. Remove from the heat after 30 seconds or so after it starts to bubble.
Stir in the cereal and flax/wheat germ and coat it well with the syrup mixture. Next, transfer this to a non-stick casserole dish, loaf pan, or cake pan and press it down firmly with the back of a metal spoon. If you want to make sure its really good and packed down, take a sheet of waxed paper and lay it over the top of the bar mixture and press down gently but firmly.
Chill for 30 minutes before cutting into bars. Once you try these, you'll be addicted!

SO HOW'D IT GO?

Fwiw, I tried a nutritional analysis of this and got 188 calories, 3g protein, 32g carbs, and 6g fat per bar.
