Easy Japanese Vegetable Soup With Tofu

What you need: 

1/2 cup fava beans
1/2 cup edamame (soy) beans
1/2 head red cabbage, roughly shredded
1 small zucchini, julienned
2 carrots, grated into curls
1 cup tofu, cubed
miso paste, to taste
water

What you do: 

1. Add fava beans and edamame to a pot with boiling water. Boil for 2 minutes, drain.
2. Add all vegetables including the beans to a wok or saucepan and stirfry until slightly softened. Once cooked, add to 2 soup bowls.
3. Cook tofu until lightly browned, and add to bowls. Prepare miso broth as per directed on container, and pour over the vegetables.
Source of recipe: I wrote this recipe. Soba noodles would be a nice addition to the soup.
