Easy Vegan Chocolate Cake

What you need: 

3 cups flour
2 cups sugar
6 tablespoons cocoa powder
2 teaspoons baking soda
1 teaspoon salt
2 cups water
3/4 cup vegetable oil
2 tablespoons vinegar
2 teaspoons vanilla

What you do: 

1. Preheat oven to 350 degrees F.
2. Thoroughly mix dry ingredients first (flour, sugar, cocoa powder, baking soda, and salt).
3. Mix in wet ingredients (water, vegetable oil, vinegar, and vanilla). Continue mixing until you obtain an even batter (no lumps).
4. Pour into a cake pan and bake for approximately 40 minutes.
I recommend topping the cake with Chocolate Frosting by Sarah.

SO HOW'D IT GO?

This recipe has become a birthday tradition since I went vegan three years ago, it's incredible! The cake is so moist and chocolate-y and EVERYONE loves it. It also makes kick-ass cupcakes! I made cupcakes for a big get-together and about 40 skeptical people were shocked by how tasty they were. I keep getting requests for more!

I changed up this recipe a bit and it came out awesome!  Instead of sugar I used stevia in equal amounts.  I made the cake into cupcakes instead and only cooked it for 20 minutes, they came out perfect.  The only complaint was that the cake came out really crumbley and fell apart. Next time I will not use baking cups, maybe they won't stick and fall apart :) Thanks for the recipe!

This was very easy but took much more than 40 min in 350 degree oven. It took mine 57 min. to be done.
So maybe splitting the batter in two is not a bad idea.

Emailed this to my mom to have her bake it for my ## birthday!! It was wonderful. Even my very non-vegan boyfriend was sold.

My mom said it was very easy to make also and that even in high altitude she had to make no other adjustments for cooking!!

Amazing!

This was my first cake I ever baked on my own, not to mention the first vegan cake I ever baked.

It was easy and turned out fabulous. I'll totally make this again!

A whole recipe should probably fill an 8" x 8" pan a little over the standard height for a cake layer.  If you halved the recipe, the cake would be much thinner than normal so reduce the baking time.

How big of a pan do I need in order to make  this?  If I half it will it still fill up a 8x8 or 9x9 square pan?  :-\

This came out so moist and lovely! I also used coffee instead of water it only gives it a hint of mocha but still tastes amazing!! I used the frosting it suggest and topped it with almond slivers and coconut flakes. Absolutely divine!!!!!!
