Enlightenment Bars

What you need: 

1 cup maple syrup
1/2 cup brown sugar
1/2 cup cocoa powder
1 teaspoon vanilla extract
a few pinches of cinnamon
1 cup all-natural crunchy peanut butter
granola (I used organic hemp plus)

What you do: 

In a saucepan, mix first 5 ingredients. Cook until it boils (make sure you stir constantly). Once boiled, turn off heat and add peanut butter. Mix. Then add granola (howe'ver much you want to obtain desired consistency). Pour into baking pan and chill until firm.

SO HOW'D IT GO?

These resemble homemade candy bars, more than granola bars. It's like if a Reese's cup had a baby with a Crunch bar.

Instead  of  cookies,  when  batter is still warm, you could press it flat in a pan and perforate the outlines of bars with a fork. That way they could break apart like graham crackers.

Instead of putting it a pan, try dropping by the spoonful on waxed paper (like nobake cookies) - that way there is no cutting! :)
