gondola sandwich

What you need: 

7 inches French bread, halved lengthwise
1 tablespoon Italian or Greek dressing, divided
2-4 slices vegan mozzarella
lettuce, to taste
2 thin slices red onion
1/2 cup marinara sauce, heated

What you do: 

1. Preheat oven to 400 degrees F. Apply 1/2 the Italian dressing to both sides of bread.
2. Layer bread with" cheese," and put in oven for about 3-5 minutes to soften cheese, but not melt it. You want to toast the bread.
3. Pull out of oven, and place lettuce, onions and rest of Italian dressing on the lettuce and "cheese." You want lettuce and onions cold. Dip in marinara.
Delicious and addictive!
Source of recipe: I tinkered with ingredients to come up with a sandwich I had from a local restaurant when I was growing up.
