Green Bean and Mushroom Sauté

What you need: 

1-2 tablespoons olive oil
3 cloves garlic, chopped
1 large yellow onion, chopped
2 cups green beans (I use frozen)
2 cups white button mushrooms
2 teaspoons lemon juice
1/2 teaspoon salt and pepper
1/4 cup vegetable broth

What you do: 

1. Saute garlic and onions in olive oil until translucent. Add the green beans and mushrooms, along with the lemon, and salt and pepper.
2. Saute for another 2-3 minutes. Add the vegetable broth and allow it to come to a boil. Turn heat to low and cover the pan for a few minutes.
3. Add more lemon, salt and pepper if you desire, and get ready to serve!
A good friend of mine told me that her secret to cooking is adding garlic and lemon to each recipe. I would agree, and go a step farther by also adding vegetable broth as well. This is an extremely simple side dish that goes well with potatoes or any grain. Add extra veggies if you have them handy!
