Healthy Moist Zuchinni Carrot Apple Muffins

What you need: 

1/2 cup brown sugar
1/4 cup canola oil
3/4 cup applesauce
1/2 ripe banana, pureed
1 apple, diced (I use golden delicious)
1 cup grated carrot
1 cup grated zucchini
1 cup whole wheat flour
1/2 cup unbleached all purpose flour
1/4 cup (rounded) ground flax seed
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon salt
chopped walnuts, to taste

What you do: 

1. Preheat oven to 375 degrees F.
2. In a bowl, mix together sugar and oil. Stir in applesauce and banana. Mix in apple, carrot and zucchini.
3. In another bowl, mix together whole-wheat flour, all-purpose flour, flax seed, baking powder, cinnamon, and salt.
4. Fold dry mixture into wet mixture. Place into muffin tins. Top with chopped walnuts.
5. Bake for 25 minutes, or until inserted toothpick comes out clean. They are soooo good and addicting!

SO HOW'D IT GO?

These were very moist and the flavors blended really well. But they did not keep well - only lasted about 3 days before going bad - so next time I'll make a half-batch that we can finish quickly.

I made the recipe as is and it turned out great!!  These are so tasty and make for a great breakfast treat!

Very good, and very moist!  Left out the walnuts and used applesauce for all the oil.  They were gone in 2 days! Made 12 regular muffins.

very, very good! I didn't add carrots or walnuts - but I did add coconut and a dash of ground ginger. Also, when mixing it was a little drier than most muffin mixes I've made, so I added some almond milk. It helped lots.

This turned out to be moist and wonderful!
My kids and husband couldn't get enough (I will have to put some of it in a hiding place for later!).

I put the batter into a 9x13" glass pan and ended up with brownie type treats! Baked it at 350 for around 40mins. I also added some coconut, vanilla, raisins and chopped dates with the walnuts. This was one of the best recipes on this site so far  :)>>> ;)b ;)b
