Inspired By Christina Melton's Black Bean Bugers

What you need: 

2 cups black beans, rinsed and drained
4 tablespoons olive oil
1 vegetable bouillon cube
1/2 cup warm water
1 medium onion, finely chopped
4 tablespoons soy sauce
1 cup vital wheat gluten
1 cup plain panko crumbs
1 1/2 teaspoons cumin
1 teaspoon dried onion powder
1 teaspoon parsley
1/2 teaspoon crushed red pepper, or to taste
4 cloves garlic, pressed or grated
olive oil, as needed

What you do: 

1. Preheat oven to 375 degrees F. In a bowl, mash the black beans together with the oil until no whole beans are left. In another bowl, dissolve bullion cube in warm water.
2. Add onion and soy sauce. In a separate bowl, combine all dry ingredients, garlic, and spices. Add all wet and dry ingredients to the bowl with the beans. Knead together for about 3 minutes, or until strings of gluten have formed. (I use a silicon icing spatula to clean sides/bottom of mixing bowl while kneading ingredients.)
3. Place the black bean dough on a piece of wax paper and form a "log" shape. Divide the dough into 8 equal pieces (easiest way is to cut in half, then half, then half again). To form patties, knead each piece in your hand for a few moments and then flatten into a patty shape, 3/4" to 1" thick. (When kneading ingredients, I don't squish between my fingers, but use my fists to keep folding everything together.)
4. Brush both sides of each patty with olive oil, place on baking sheet, and bake for 15 minutes. Flip patties and bake another 10 minutes.
5. Remove from oven. If you are making patties for next day, let them cool, then refrigerate. If eating now, pan fry indoors or grill outside for another 10 minutes. Serve with guacamole or a slice of avocado. (I lay a silicon baking sheet across my baking pan. Nothing ever sticks to silicon.)

SO HOW'D IT GO?

So... these burgers are pretty much the best thing ever.

I didn't have panko crumbs.  I used 1/2 C. of some toast crumbs, and 1/2 C. of crumby corn flakes.  Also, I'm going to go for 6 bigger burgers next time. 

Super de'lish - I want to eat them every day for the rest of my life.

Wait, also next time, I'm going to grate the onion instead of tiny chopping.

i like these.
although i used kidney beans instead of black beans.
They were Good! and quite easy to make.
I liked the chewy consistency. They were soft (mushy) inside, but it's made out of beans and beans are mushy so... i still like them.

loved them... only it was waaaay too much onion for me.  i dug out about half of what i put in because i knew as soon as i saw the amount of onion compared to black beans i wasn't going to like it, so next time i think i will use a quarter of what the recipe calls for.

I loved these!  I had no breadcrumbs on hand and didn't feel like making any.  I replaced them with oatmeal and a little chickpea flour.  I also added a touch of chipotle powder to the mix.  Just delicious!

These were great!  I followed the recipe EXACTLY (and that is hard for me, I don't usually believe in measuring. lol)  I made them for my fiance and my best friend - both are meat eaters.  They LOVED them and even wanted more.  I will surely be making these again.  Thank you!

These have a lot of potential.  I like the texture on the outside of the burger, but the insides were a bit mushy for me.  I think next time I'll make them really thin and add some rice to take away some of the mushiness.  Great flavor though and worth experimenting with.

These were ok, They definitely held together well because of all the gluten. I think, though, that gluten definitely has a 'flavor' that I don't particularly care for - I've decided I definitely prefer black bean burgers without gluten, even if they fall apart.

;)b Thanks for the recipe!! These were delicious & were enjoyed by myself & my non-vegan family too! The texture was 'meaty', & they held together well & didnt fall apart. I didnt see in the recipe where the garlic was supposed to go, so I added it with the onions. I served mine with guacamole & fries. Very yummy!!  ;)b

great recipe! i also added a couple shakes of liquid smoke, garlic powder and chili powder and cayenne instead of crushed red pepper, as well as less soy sauce.  When the burgers were almost done frying, I also added a little bbq sauce on top of each one.
I've been looking for a good chewy veg burger recipe and this one works really well.  I cook with wheat gluten a lot but usually I boil it instead of bake it-baking it gave it a different texture which works really well.
This recipe is definately worth trying!
I also minced the onion for better texture...
