Irish Nachos

What you need: 

5 white potatoes, diced, and fried or boiled until soft
1 small tomato, diced
1 jalapeno, seeded and minced
1 cup vegan mayonnaise (I use Vegenaise)
1/2 cup nondairy milk (plain or vanilla)
2 tablespoons apple cider vinegar
1 teaspoon garlic salt
1 teaspoon pepper
vegan cheddar cheese (optional)

What you do: 

1. Place potatoes on a plate and sprinkle with tomato and jalapeno.
2. Ranch dressing: In a bowl, combine mayonnaise, nondairy milk, garlic salt, and pepper; evenly mix.
3. Pour dressing over potatoes and top with vegan cheese.
4. Broil until the cheese starts to melt or sauce starts to bubble.
Source of recipe: These nachos are from an Irish pub in Richmond,VA. The usual recipe has ranch dressing and chesse so I just made it vegan. Ranch dressing recipe I got from recipezaar.com and veganized.

SO HOW'D IT GO?

I omitted the tomato and kept everything else the same! I had lots of "ranch" leftover though. You could easily double the amount of potatoes if not more.

These were pretty good....I changed things up a little....
I roasted the potatoes first, made my ranch the way I normally make ranch, left out the jalapeno cuz I didn't have one, added fako-baco bits, green onions, tomatoes and sriracha.....and poured melted Follow Your Heart Cheddar on top
Next time I'll leave the tomatoes out....they didn't really go....
Pretty good bar food.
