Irish Oatmeal

What you need: 

1/3 cup steel cut oats (preferably quick cook)
1 cup vanilla almond or soymilk
2 tablespoon pecans, chopped
1 tablespoon maple syrup

What you do: 

1. Combine oats and milk in a saucepan and cook over medium heat. Stir occasionally until oats are cooked. Add water if needed for a smooth consistency.
2. Remove from heat and stir in pecans. Adding the pecans after oats are cooked keeps them crunchy. Spoon oatmeal into a bowl and pour maple syrup on top.
Source of recipe: Inspired by whatever I had available in the pantry one late night. Steel cut oats tastes so much better than rolled oats.
