Low Fat, Low Carb Banana Muffins

What you need: 

2 heaping tablespoons granulated sugar
1 tablespoon vegan margarine
1/4 teaspoon almond extract
1/4 teaspoon vanilla extract
2 large ripe bananas
1/2 cup white rice flour
1/2 cup old-fashioned rolled oats
1 heaping teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
pinch salt

What you do: 

1. Pre Heat oven 350 degrees F.
2. In a pot over medium heat, melt sugar, vegan margarine, almond extract, and vanilla extract. Watch not to burn. Add bananas & allow to cook them will they are mushy. ( I used a potato masher to mix them in the pan and make them like a lumpy liquid.)
3. In a bowl, sift rice flour. Mix in oatmeal, baking powder, baking soda, cinnamon, and salt. Then add the wet ingredients. Stir until it is like a lumpy cake batter.
4. Fill muffin pan about 1/2 full. Bake for 25 minutes, or until a tooth pick comes clean from the muffin. (They don't really rise, but cook through at 25 minutes). They are really good. I put a small pat of butter on mine while it was hot.
