Macaroni and Cheese

What you need: 

3-4 cups of cooked macaroni
4 tablespoon nutritional yeast
2 tablespoons powdered soy milk
1/2 cup of plain soy milk
Salt and pepper, to taste

What you do: 

Add all ingredients to hot, drained macaroni. Stir well. Measurements are approximate--use more or less depending on your tastes and amount of macaroni.

I made this tonight. It didn't taste anything like blue box macaroni and cheese, but after thinking of it as something totally different it wasn't awful. I think it needs some extra spices, it was really plain.

I got a recipe like this from a hip coffee shop in Pittsburgh a few years ago (Kiva Han, RIP). Their secret was some really nasty, and questionably vegan, oil. I find however that a few table spoon or two of vegetable oil tends to bring out the fatty feeling of eating traditional mac'n'cheese. I've also been experimenting with veganaise and vegan cream cheese.

I've also noticed that this is best spicy. Some chili powder, cayenne, turmeric (ups the yellow color too), cumin, and coriander give it a neat almost mediterranean feel.

This was good.  I added a little paprika, ground mustard seed and cayenne.  I only used unsweetened soymilk, and did not use the dry stuff.  and I also added 1/2 tsp of cornstarch and cooked until thinkened.  Very good.
