My Happy Sandwich

What you need: 

1/2 avocado, mashed
two cloves garlic, minced
1/2 small onion, chopped
1/2 small tomato, chopped
1-2 mushrooms, sliced
lemon juice to taste
sea salt and fresh ground pepper to taste
2-3 tablespoons sunflower seeds
1/2 cup rice
alfalfa sprouts
pita bread

What you do: 

Combine all ingredient except sprouts and pita. You can add more or less or completely omit whatever you choose. After everything is mixed cut pita in half. Put one half inside the other. Add the mixture and some sprouts, and you are ready to feast.

SO HOW'D IT GO?

Very good flavor, I used fresh baby spinach. I thought it woke my tase buds up...wow!

This is great! I had it tonight for supper with a baked potato. I tried it with sprouts but they are not my favourite thing. Next time I think I'll try using some spinach instead.

Oh yum!  Just another one of those lovely vegan inventions....put, put & put together and there you have it!...a delishimo snack!! Whoopeee!!!  :D

Yes this is my happy sandwich! So filling but so tasty!

We doubled the recipe and used:
1 1/2 avocado, 1 clove minced garlic, 1/4 c. chopped onion, 1 small diced tomato, 2 sliced mushrooms, and no sunflower seeds or rice.
We served these with homemade whole grain pita bread, sprouts, and cucumber slices (which add a great touch!).

A little too much onion and garlic, so next time we will reduce. Mushrooms good in that it extends the guacamole. Love the tomatoes with it.

Will make weekly!

Quite tasty!  I just finished making this, and it's so quick and easy.  Like others, I also lightly sauteed the onion, mushroom, and garlic, before adding to the rest of the ingredients.  I subbed Bragg liquid aminos for the salt.  Instead of making a sandwich out of this, I'm dipping tortilla chips in it.  I'm sure I'll be making this again soon.

This has become one of my favorites.  I like to saute the garlic, onions, and mushrooms in a bit of olive oil beforehand, and I use lettuce or salad greens instead of sprouts.  Awesome!!

This has been in my recipe box forever and I finally got to make it!  It was so worth it.  Next time I'm going to add some cumin and maybe paprika as well.  Very good indeed!

Yum! Tastes very much like guacamole with rice and sunflower seeds. I added garlic and herb seasoning and some herbs as well as some chopped kalamata olives. I think I actually like it better as a dip, but it was also good as a sandwich on oatmeal bread with vegenaise, mustard, vegan sliced cheese, sprouts. I made double this recipe and it makes a TON!

After fasting, avacado and sunflower seeds can be heavy at first.  I find cooked veggies soothing esp. carotts. I also tend to stay away from spices at first too...bland foods at first.  Not sure what you can sub though.

you could sub the rice with more sprouts maybe? I guess you could also use soaked oats, if you wanted to sub them with another carb of sorts. I know oatmeal works just fine soaked overnight in a little water... i'd try the sandwich that way, but then again, I'll eat oats in any format. :P
Are you wrapping the sandwich in lettuce, or do you have raw tortillas or something?
