Nutritional Yeast Queso Sauce

What you need: 

1/4 cup nutritional yeast
1/4 cup flour
1 teaspoon paprika
1 teaspoon salt
dash garlic powder
1 cup water
2 tablespoons margarine
1 1/2 cups salsa or 1 (10 ounce) can diced tomatoes and peppers
tortilla chips, to serve

What you do: 

1. In a saucepan combine dry ingredients (nutritional yeast, flour, paprika, salt, and garlic powder).
2. Whisk in water. Continue to whisk constantly over medium heat until mixture is thick and bubbly. Remove from heat.
3. Stir in margarine until melted, then stir in salsa. Return to low heat and cook just long enough for salsa to heat.
4. Pour over chips and eat like nachos or use as a dip.
Remember to always whisk it!
Source of recipe: I got this recipe from a friend a couple of years ago and it is by far the best vegan queso I have ever had. Add this to any and all Tex-Mex that you make or use as a spread on sandwiches.

SO HOW'D IT GO?

I am trying to get my omni husband away from his traditional Velveeta-sausage dip, and when I prepared this dish in hopes of getting him to try it, I thought, oh no, there is no way he's going to eat it.  I was so wrong.  He loved it and even suggested that next time, I add fresh pico de gallo instead of the canned Ro-Tel, so I'll be trying that next.

Woah! Seriously the best "cheese" sauce I've had. I really enjoyed it! The only thing I would change is if using the tomatoes, I would drain the liquid first. But I like it a little thicker.. Seriously delicious though!

This stuff is so delicious! I usually add about half this amount of salt, since the Earth Balance I use has salt in it. This is so good! I've made it without any tomatoes or peppers and it was good, but I really like to put about a cup or so of salsa in it--just enough to make it orange! I made this last night for my omni-eating anything parents, and they actually liked it! Hooray! I want to use it to make enchiladas like many have recommended. Too yummy!

I have some extra in my fridge right now so I'm going to see how well it reheats later and if it's still good, I might always keep a jar around.   :)

I think it reheats really well!  I usually have to add some unsweetened non-dairy milk or water to make it creamy again, but with some heat & a good stir, it's almost just as good as when it was freshly made.  ;)b

Omgosh this was sooo yummy!  I have been craving mexican food and mac and cheese, so I used this over some elbow macaroni and it was great.  And I had all the ingredients on hand (except the paprika, which I was able to find 2/$1 at a store in town), which is rare for me since I'm living in a dorm and don't have much for supplies. 

I also really liked it because it got me to eat nutritional yeast, which I actually don't like very much.  I sneak it onto pb&j's since I don't taste it that way.  But I really liked it here.  I have some extra in my fridge right now so I'm going to see how well it reheats later and if it's still good, I might always keep a jar around.  :)

I made this again tonight and used it to smother garbanzo/black bean soft tacos stuffed with cilantro rice (or would they be considered burritos?). The omni bf and I loved it. We ate the remaining queso with tortilla chips. So good!

SO GOOD!!! I used less salsa than called for because I knew I was going to dump salsa on my chips as usual.  This is a fabulous recipe!

So I've been meaning to make this recipe for awhile, and just hadn't gotten around it until today (I'm on the verge of moving, so I've been working on emptying out my pantry bit by bit, somehow there's still a ton of nutritional yeast left though....)
Well, I made if and added half a diced tomato and a diced hot pepper from my friends garden, and used it as a cheese sauce over broccoli.
SOOOO GOOD.
When I was a kid my mom used to smother everything I wouldn't eat in cheese sauce, and now I have a way to relive those memories without the guilt, thanks so much!

So good!!! I added a little bit  of mustard and hot sauce then pour it over chips and topped with black beans and avocado!!! Thanks :D
