Oatmeal Chocolate Chip Cookies (with flaxseed)

What you need: 

1 cup dairy-free margarine, preferably Earth Balance
1 cup sugar
1 cup brown sugar
4 tablespoons water
2 tablespoons flaxseed meal
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats, thick cut if you can get them
1 cup or more dairy-free vegan chocolate chips

What you do: 

Preheat oven at 375 degrees F. Mix together flaxseed meal and water, set aside for 3-5 minutes. Cream (beat well) vegan margarine and both types of vegan sugar. Stir flaxseed mixture and add with vanilla to the vegan margarine mix. Beat until blended. Sift together dry ingredients, except oats and chips. Add to vegan margarine mixture. Stir in oats then chips. Scoop or drop onto baking sheet, preferably lined with parchment or silpat. The dough is a little crumbly, so it helps to use a scoop.
Bake 8-12 minutes, depending on size of cookies.

SO HOW'D IT GO?

these were the first vegan cookies that i ever made, and they were great!  ;D
my dad thought that they were going to be gross, you know, becuse they're VEGAN! can't have good cookies without eggs, right? WRONG omg, i could not keep him from eating them! lol
i'm taking the leftovers to school to give to my freinds- i really think they are going to love these cookies!  :D

I also added in applesauce instead of some of the oil.  I found the carob chips burnt the bottom on the cookies, I think I made them a little too large...  Perhaps next time I would make them smaller and decrease the over temp...  I think I would also add walnuts to the mix!

i just made these cookies and YUMMY!!! i cut the sugar in the way granolagorilla said and i also cut the margarine in half and replaced the other half with applesauce.  i had to add a bit more flour though.  the cookies turned out really moist and chewy and squishy and yummy!!! im taking the extras to the ronald mcdonald house kids later this week... im sure they are going to looooooove them!
