Oatmeal Squares

What you need: 

2 cup instant oats
1/4 cup brown sugar
1/4 cup raisins
1/2 to 1 teaspoon cinnamon
1/2 cup margarine
1/4 cup corn syrup

What you do: 

Mix oats, raisins, vegan sugar, and cinnamon in mixing bowl. Stir in vegan margarine and corn syrup. Press into lightly greased 9 square microwave safe dish. Microwave uncovered on high for 2 minutes. Refrigerate for 15 to 20 minutes before cutting. enjoy..

SO HOW'D IT GO?

 Mine are in the oven at the moment.  I added some shredded coconut, pumpkin seeds, sunflower seeds, ground flax and a little bit of coconut oil.  Cut down on the Corn Syrup.  Hope the coconut oil does not get hard in the refrigerator but did not add that much.  Am going to melt some dark chocolate on top as others did.  If these are good in the morning, then everyone at work will get a nice vegan treat!  Oh, and omitted the raisons because did not think it would go well with the coconut.  Was really going for some crunch!

i just made these i love that they're fast and simple to make.  I substituted shredded coconut for raisins as that's what I had and also topped it off w/ choc chips.

I'v bin wanting to make something with oats (Oat freek) so this was perfect.
I used molasses for the corn syrup. UMMM! Good stuff.

This was a good and very easy recipe.  I substituted the corn syrup with 1/4 cup of organic barley malt, which smells and tastes a little like molasses.  Some of this molasses taste was imparted to the bars, giving them a rich complex flavor.  I also used dried cranberries instead of raisins and added a small amount of chocolate chips. Also, to get the bars firm yet chewy I had to microwave them for about 4 1/2 minutes instead of 2.  Yum!

would malitol or agave nectar syrup work as a replacement for corn syrup? I have to make my food  with a low glycemic index and corn syrup is just not the answer :-\...

These were super easy and very tasty too! I added some chocolate chips into the batter and then once they cooked for 2 min., I topped it with more choc. chips and popped it back into the microwave for another 30 sec. and then carefully spread the chocolate. They actually set up quite nicely at room temp. I will definitely be making this again. Thanks for the great recipe! ;)b

These were good but when I took them out of the oven they looked a little naked and they asked for a coating of chocolate.  So I put a handful of chocolate chips on the hot bars and spread them out when melted.  Really tasty and chewy.

these were good.  i subbed sunflower seeds for the raisins and topped the mixture with chocolate chips then i popped it in the oven for a bit so they could melt.  the oatmeal mixture isnt holding its shape as much as id like - it's kinda soft but my friend said they reminded her of eating oatmeal cookie dough as a kid.  i think dried cranberries mixed in would be good, too.

MMMM this was good! I didnt have any rasins so I just put some raw sunflower seeds!
I think this would be really good with mini chocolate chips!  Good school snack! ;D
