Outstanding Cheezy Potato Bake

What you need: 

oil, as needed
6 small-medium red potatoes, sliced in 1/2" rounds
1/2-1 yellow onion, sliced
vegan buttery spread, to taste (I use Earth Balance)
salt and pepper, to taste
1/2 cup nutritional yeast
1-1 1/2 cups unsweetened nondairy milk or water

What you do: 

1. Preheat the oven to 450 degrees F. Prepare a casserole dish (I used an 8x8" glass pyrex) with oil to cover the bottom. Set aside. Add 1 layer of potatoes to the bottom of the dish (I used 2 potatoes per layer, for 3 layers).
2. Add some sliced onions to the top of the potatoes, season with lots of salt and pepper, and add a few dollops of vegan butter on top of the layer.
3. Add the nutritional yeast to a bowl, and pour in enough milk or water (I used a mixture) to make a sauce (medium thinness). Season this with salt and pepper. Pour some of the sauce over the first layer, but remember you need enough for 3 layers.
4. Continue to layer the dish with potato, onion, salt, pepper, vegan butter, and cheezy sauce. You should have enough sauce to pour some on top. I recommend lots of onions on top because they brown so beautifully. Make sure you season with enough salt and pepper!
5. Pour some milk in the dish to about 1/2 up the dish. Bake for 45 minutes-1 hour (until the potatoes are very tender, and the sauce is bubbling).
Honestly, we could not tell any difference between this and the au gratin potatoes of our past.

i'm pretty sure i'm in a food coma...i don't even know how i'm typing this  :o  This is so GOOD!!! I have purposely stayed away from things that claim to be "cheezy" because of bad experiences..but this was delicious.  This is going on my "First Vegan Thanksgiving" menu. Thank you!!!

U need to try melty cheese! it's so awesome i swear... i'm not into vegan "cheese" much either but that stuff is awesome!

Oh my AC, this was so very very good!!!  I was looking for something yummy yummy yummy for lunch and this hit the spot!!!  I'm at home from work cos I'm sick and needed some comfort food and I don't even feel guilty for eating nearly the whole pan of this!!!  I pretty much followed the instructions and just added some garlic cos its sooooo good, but you're definitely right, you just have to estimate the amount of everything as you go along, although it would be hard to muck this recipe up, its so simple!!!  LOVE IT!!!!!  :)

This recipe is great - Super easy to make and delicious! 
My veggie boyfriend who hates all things fake-cheesey (what a nutter!) loves this dish - So thanks for making him start to change his mind about "cheezy" dishes!  ;)b

I just made this and i think throwing shredded vegan mozerella was a bad choice because it just burnt. I feel as if there isnt enough cheezy sauce even though i made extra..... im going to have to try it one more time!

This reminded me of the herb scalloped potatos from Veganomicon, except you can do so much more with this recipe. I made half the recipe using only 3 potatoes and half an onion.  I used 2/3 cup nutritional yeast mixed with unsweetened soymilk, since 1/2 cup would be too watered down and 1/4 cup for half the recipe wasnt nearly enough. I also sprinkled some frozen peas over each layer. Next time I definately am going to spice up the sauce a bit. I think maybe I'll add a bit of garlic powder, paprika and a bit of cayenne pepper. I think it would be better to just "lightly" spray the pan next time, since the mixture of an oil coated pan and EB was too oily/runny, even though I only added just enough to spread along the bottom...maybe too much EB? Anyways, I love it! My hubby hate nutritional yeast and thought I was ruining the potatoes with it, but as it was cooking he admitted it smelled really good! Too bad he didnt try any though...

Yummy!! I've made this twice (at the request of the boy toy), and we loved them both times! Instead of layering the sauce and putting EB in between the layers, I just put everything over the top. Definitely a keeper  ;)b
