1 vegan burger patty (I use Gardenburger Veggie Medley)
1 whole wheat pita (cut into halves)
2 cups leafy greens (i.e.: romaine, radicchio, spinach)
½ to 1 cup onion sprouts
1/4 cup shredded carrot
1 to 2 thinly sliced plum tomato
1 to 2 tablespoons peanut sauce or Tahini (or to taste)
Simply defrost vegan burger (you can just microwave for 1 to 2 minutes until hot), divide patty in two and crumble each half (half for each pita).
Warm pita halves in the oven or in the microwave, divide all ingredients among the pita halves, topping with peanut sauce or tahini to your taste and enjoy!
Doesn't get much easier than that for a single serve light supper/lunch :)
