Red Lentil Soup

What you need: 

olive oil (just for cooking onion and garlic)
1/2 cup red lentils
1 small onion, chopped
2 cloves garlic, crushed
1 and 1/3 cups veg stock
a bay leaf
1 zucchini, chopped
1 carrot, chopped
some mushrooms, chopped
sea salt, black pepper
healthy bread

What you do: 

Heat oil in pot and saute onion and garlic for maybe 3 minutes.
Add bay leaf, lentils, stock, and seasoning.
Bring to boil and then cover and simmer for 10 minutes.
Add veggies, bring to boil again and then cover and simmer for another 10.
Put soupy into bowl and eat with bread and a spoon.
Yum :)

I ended up using a quart of veggie broth.  I think it was a good amount of liquid, but my boyfriend said it could've done with a little less.  I didn't have a zucchini, so I used two carrots instead.  For the mushrooms, I used one portobello cap.  We liked this a lot!  :)

DELICIOUS!!! Very tasty & satisfying. I'm keeping this recipe.

It was very thick & I added extra broth too.

it was too thick though, more like a stew. so i added 6 cups of water (it didn't even need stock because it's so flavourful). i'm cutting back on salt so i didn't use it at all and still enjoyed it. thanks!
