Scrambled Eggs

What you need: 

1/2 block regular or silken tofu (the pre-spiced kind works well too)
3 slices of your favorite melty vegan cheese
a drip or two of soy milk
veggies of choice - mushrooms, avacado, sundried tomatoes, brocolli. . .

What you do: 

Place the tofu in a bowl. Shred or rip up the veggie cheese into the bowl. Break up the tofu with a fork until it is in small chunks (don't puree it completely or you will be eating mush). Throw in the veggies and a drip of soy milk and toss it all together. Dump the contents into a skillet over medium-high or high heat and mix it around so it doesn't stick (you may need to add more soy milk).
Cook until the tofu is heated through and the cheese is melted. The key is to add enough cheese to get it to all stick together. Good with a dash of salt on top, and also as a dinner or lunch, and with the quick biscuits listed on this site.
