Scrambled Seitan

What you need: 

dash garlic powder
2/3 cup lite soy sauce
1 cup vital wheat gluten

What you do: 

1. Mix the garlic powder into the soy sauce and add to the wheat gluten, adding more liquid if needed.
2. Spray a large skillet with nonstick cooking spray, and saute the seitan over medium-high heat until browned.
Serve in place of ground meats in casseroles or burritos.

SO HOW'D IT GO?

I made this recipe this morning for some very, very hungover friends/hubby. 2/3's cup of soy sauce sounded like a lot, so i basically cut it down to 1/3 soy sauce and 1/3 water. that was still way too salty for our taste (though, our scottish friend loved it). i think next time i'd put some nutritional yeast in there and cut the soy sauce even more-- or at least substitute it with diluted veggie broth.
