Seitan Scramble

What you need: 

1 bell pepper, chopped
1/2 onion, sliced
handful white mushrooms, quartered
handful carrots, shredded
1 - 8 ounce package seitan, diced
1 tablespoon soy sauce
freshly ground black pepper, to taste
any other spices you wish to add
2 to 3 tablespoons olive oil

What you do: 

1) Have all your ingredients ready to go.
2) Heat 2 tablespoons olive oil in a fry pan. Add diced seitan, soy sauce, pepper, and spices. Cook for about 5 minutes, or until seitan starts to brown. Add sliced onions and cook for 3 minutes. Add chopped bell pepper and shredded carrots and cook 2 minutes. Add quartered mushrooms and cook 2 minutes.
Good served with breakfast potatoes and ketchup :)

What a delicious comfort food!  I added some Cajun spice mix and it was great.

Wow! 

I was just browsing looking for a quick idea for breakfast.  I saw this one it had four ingredients in it that are in my fridge that needed to be eaten up, carrots, onion, green pepper and seiten.  I had some leftover seitan from the "easiest seitan" recipe that I made a week ago.  I cut up the sietan into small chunks, grated three carrots and cut up one green pepper into small chunks.  I like my green pepper well cooked and soft so I cooked the onion and GP first, after a few munites I added the seitan and the diced carrots.  The only spice I added was some soy sauce.  I am leary of garlic as my son doesn't like garlic, but to be honest, I really did not think my son would like this so gave him some ceral to eat and soymilk.

But I am tyring to eat less sugar so I mainly made this just for me.  It turned out VERY good, though it didn't look like it would be very good.  It is one of those things that tastes better than it looks.

THe way I made it, the carrots were still a little crunchy and the onions and green peppers were soft and cooked, and the seitan was cooked in such as way as to be just starting to get a little golden on the sides.  It was perfect!

My son was curious so I let him try a bite and he loved it!  He kept comming back for more and more bites (he was done with his cereal and running around with his toy car). 

This is definately a keeper, one I will make often.  Thanks so much for this recipe!
