Spaghetti Squash with Garlic and Onions

What you need: 

1 medium-large spaghetti squash, halved and deseeded
1 medium onion, sliced, divided
4-5 cloves garlic, crushed, divided
2 tablespoons olive oil, divided
pepper, to taste

What you do: 

1. Preheat oven to 375 degrees F. Add 1/2 onions and 1/2 garlic to each squash half, and a tablespoon olive oil to each squash. Sprinkle pepper on each.
2. Place halves in deep pan, and add enough water to just cover the bottom of pan. Cover pan with a lid or foil wrap.
3. Place in oven and bake for about 45 minutes.

SO HOW'D IT GO?

Spaghetti Squash is one of my favorites! You can speed up cooking time by nuking the whole squash in the microwave for 3 minutes, splitting the squash in half, placing face down in a glass dish with a bit of water, and microwaving it again for about 15 minutes. Much easier!  :-*

I added two sprigs of rosemary to each half of the squash, along with the garlic and onions.  The rosemary gave the dish a woody, earthy flavor.  I never tried the recipe without the rosemary, and honestly, I could not imagine it without it.  Without the rosemary, it seems that the dish would be lacking good flavor.
