Spicy Black Beans and Corn

What you need: 

1 cup of frozen corn
1 cup of black beans, cooked or from a can
1/4 cup of your favorite spicy salsa

What you do: 

Mix all ingredients in a microwave safe bowl and heat on high for 2 minutes.
Or if you don't like the microwave, mix in a small sauce pan over medium heat until the mixture is heated.
This is a quick and easy side dish for Mexican meals. Also a good source of protein. You can make it for 1 or 10, just use equal parts of corn and black beans and 1/4 of that amount in salsa.

SO HOW'D IT GO?

I make something very similar to this, but I like to add some Boca Ground Burger stuff and some shredded vegan cheese. Tasty, cheap, and quick!

I was looking for something for dinner and just happen to have the three things needed for this dish.  It was very easy and quick and tasted great ;)b

i made this and used a little balsamic vinegar at the end and topped it off with some fresh cilantro. easy stuff

This recipe was simple and tasty.  I used canned corn, and rinsed the beans out of a can. Of course, the taste will be determined by the quality of salsa used.  I added about 1/2 teaspoon cumin, and then drizzled it with lime juice before serving in order to add another dimension to the taste.
