Spicy Healthy Zucchini Unfried Rice

What you need: 
  • 3/4 th cup uncooked white rice ( yes the less the better).
  • 1 onion.
  • 3-4 tablespoons of ginger-garlic-green chilli paste(you could omit the chillis if you dont want it spicy).
  • lots of chopped/diced/matchsticked veggies like green & yellow zucchini,carrot,green beans,tomato.
  • 1 handful mung bean sprouts.
  • 1 cup frozen green peas.
  • freshly cracked pepper.
  • 1 lemon.
  • Soy sauce 2 tablespoons diluted with water 1:2 ratio(1 tablespoon soy sauce+2 tablespoons water,I dont wanna ingest a lot of salt thats why I diluted it).
What you do: 

1. I soaked the rice for an hour & then cooked it in a pressure cooker for 1-2 whistles...I got sticky rice today(even hough they look separate)Skip the soaking...

2. Now cut up all the veggies in the desired shape but keep them thin & not thick slices...Prepare the soy sauce dilution & keep aside...

3. First fry the onion with 1-2 teaspoons of water(water saute), try to get a golden color its easy if you are using a non-stick,but I used a steel casserole,so mine wasnt browned..then add the ginger garlic paste & saute it with the onions for some time...

4. Add the hardest veggies first like carrots saute it for some time & then add 3/4 of soy sauce & all other veggies except tomatoes & keep stir frying them on medium to high heat,once you stir-fried them to desired doneness,add the thawed green peas & tomatoes stir fry for a couple minutes..

5. Now add the rice & pepper,mix again,add the remaining soy sauce,mix well,turn off the gas...Add lemon juice & chopped green onions if you got them,I didnt have it...Serve it hot/warm  on a bed of greens...

Variations: add oil of choice to the recipe & follow the same for fried Spicy Zucchini fried rice...
