Spicy Sauteed Brussel Sprouts

What you need: 

1/2 pound Brussels sprouts, removed from stems
2 tablespoons plus 1 teaspoon vegan butter
1/8 teaspoon red pepper flakes
large pinch cayenne pepper, or to taste
1 tablespoon hickory flavored liquid smoke, divided
1 tablespoon capers, roughly chopped
1 tablespoon balsamic vinegar

What you do: 

1. Remove rough outer leaves from Brussels sprouts and chop each in half. Rinse sprouts in colander and drain, cut side down, on a clean towel.
2. Heat a non-stick skillet over medium heat. Add 2 tablespoons vegan butter and stir frequently until bubbling stops. Add red pepper flakes, cayenne pepper and approximately 1/4 teaspoon liquid smoke; stir to mix.
3. Add Brussels sprouts, toss to coat in butter mixture and then arrange cut side down. Allow to cook undisturbed over medium heat for approximately 5 minutes until cut sides of sprouts are deeply browned. Stir sprouts and continue to cook until sprouts are slightly charred on exteriors.
4. Add remaining liquid smoke, capers, balsamic vinegar and salt and pepper to pan. Stir to mix before adding remaining teaspoon of vegan butter. After vegan butter is melted and incorporated into dish, remove from heat and serve immediately.

SO HOW'D IT GO?

I just made this, and although I love brussels and liquid smoke, i really think there is too much in this recipe. I mean, Its definitely edible, but I cannot taste the brussel sprouts over the liquid smoke (and it makes it pretty bitter). I advise those who try this recipe to use the liquid smoke sparingly.... maybe 2 tsp instead of a tbsp.

this sounds really good but i just wanted confirm that it calls for 1 tablespoon of liquid smoke.  since that stuff is pretty potent in small doses i was wondering if it was meant to be teaspoon (or less?).  thanks!

It really is a whole tablespoon of liquid smoke.  However, if your preferences is for a slightly less smoky flavor, you might consider scaling that back a bit.  The recipe my husband adapted this version from used fat rendered from hard chorizo.  His goal in the vegetarian adaptation was to keep the smoky, spicy flavor that really makes these humble brussel sprouts pop.
